Friend! Especially their delicious green tops. And actually the fruity rooty part too. Good for you too.
I’ve never grown them and I’m going to try just a few this year. In preparation, I found this very cool blog about it from In My Kitchen Garden (an offshoot of farmgirlfare). Great information.
Direct sowing is the way to go. Soak em a bit. Stick em in the dirt.
If it goes well, I’m going to go for a late summer sowing also.

Beets are fab, especially roasted. I grow both red and golden beets for fun, both are equally delicious. Glad my advice helped at the horse farm. My other advice — get manure from a friend who will load it for you and will dig for the good stuff.
I think your strategy will work great.
A manure friend is a damn fine idea. I do have a friend who is a very good cook. That’s good too. In fact, he can work some beet magic in the kitchen too.

Lumpy manure not for the garden this year.. but it will give my compost pile a great start this summer.
